Our favorite organic shabu-shabu spot! They are a little pricier but have the full range of options (beef, seafood, chicken, pork, veggies) but also have lamb. Yum.

Japanese style hot pot - super fresh selection of meats and veggies. Great place to dine when you're feeling a little chilly. Super healthful too.
