Three years ago, Nathaniel Doboin and Thomas Teffri-Chambellan opened this gluten-free bakery that has its own mill. They make flour out of rice, buckwheat, chickpea, sorghum, and millet. And you can choose white, brown, or whole grain for any of them. I love their five-grain breads and their Chambellines pastries.

In this small shop on rue du Nil, you can taste exceptional coffees made from beans curated from across the globe and roasted in Paris by Hippolyte Courty. Here, fine and unique coffee is appreciated with no fuss nor add-ons. Intense and authentic, these coffees each tell a unique story about their land and cultivation. The intense Bourbon Pointu will easily convert a coffee amateur. Pick up a bag of beans to take home.

Marie-Anne, the daughter of Christian Cantin, founder of the cheesemakers guild, manages this fromagerie with her daughter and husband. She is fighting against the standardization of cheese by carefully selecting cheeses that are produced in limited quantities on small farms. And she ages some of them, like Beaufort and Comté, for up to several months in her cave. Cheese aficionados can ask Marie-Anne for a private tasting built around their chosen cheese.

I’ve dreamed of making my own chocolates since the 1970s, when I used to spend my days off at the shop of famous chocolate maker Maurice Bernachon. My dream has now come true. Along with Nicolas Berger, chocolate maker and roaster, I’m making chocolates from the bean to the finished sweet at this shop. We use vintage machines and traditional methods to make all chocolates and sweets.

Gilles and Catherine Vérot are true 21st-century charcutiers. They know everything about the traditions of charcuterie but remain open to new ideas. You can’t resist their head cheese, liver pâté, or ham puff. For purists, they prepare an irresistible pistachio pâté en croûte.

Located on one of the liveliest squares in Paris, this shop is quite a surprise. Who remembered what a “graineterie” was? Here, you’ll find an incredible selection of dried beans, grains, herbs, and herbal teas. And probably a thousand other ingredients you just can’t live without. I recommend their beans from Tarbes and their tiny green flageolet beans. Their spices, like the ras el hanout mix from North Africa, are also very notable.

It’s so hard to choose among the Sicilian treasures sold in this tiny specialty shop: olive oils, smoked fish, anchovies. Sometimes after I’m done shopping I stay for an aperitivo. It’s just like Sicily: only the bay laurels and Barbary fig trees are missing. I love their Bianca olive oil: It’s light, delicate, and has a taste of lemon. Add some olives, fennel seeds, and red pepper and it’s delicious.

For days when you don’t have time to cook, Angèle Ferreux-Maeght prepares gluten free and vegan meals to go and sells them in this colorful and retro storefront. You might find “Season flowered salad with quinoa, flaked almonds, lentils, cranberries, fresh herbs, and raw vegetables flakes” or “Matcha tea mini-cake”. Smoothies and green juices, too. Also pick up some of the natural ingredients by Angèle, like her Kale crisps, banana crackers, and her homemade granola.

Florence Kahn’s Yiddish deli has one of the nicest façades in the Marais, made of blue and white mosaic. Inside, everything is homemade every day. You’ll find poultry liver pâté and smoked fish, delicate cold meats, excellent cheesecake, rich sandwiches, and onion rolls ready to be stuffed at home. Seek out the bags of ferfelis on the shelves. It’s homemade Yiddish pasta that’s roasted twice in an oven, giving it a very special taste.
