The success of the café was founded on the invention of the bicerin, an evolution of the eighteenth-century bavareisa, made using coffee, chocolate, milk and syrup. The café was also involved in the Risorgimento and the Unity of Italy, thanks to Camillo Benso di Cavour. It is said that the Count, who was liberal, secular and anti-clerical, would wait for the royal family to leave the sanctuary, instead of accompany

The place became a meeting point of politicians, artists and intellectuals as D'Azeglio, Giolitti e Einaudi and was awarded the title of Official company of the Real Casa. The restaurant, as it currently appears, is the result of the first reconstruction following the enlargement of 1909, designed by Giulio Casanova and Pietro Fenoglio. The result is a very elegant space characterized by a wide use of mirrors, marbles, bronzes, gilding and stuccos.
