Book an adventure or instructional course in Climbing, Canyoning or Abseiling. Great guides and lots of options to choose from even if you're a total beginner. If you're in the area in summer then I highly recommend a canyoning trip. If you've ever rock climbed indoors and enjoyed it then the Blue Mountains is a great place to learn the skills to climb outside.
