Let's meet up at a Praça da Fruta in beautiful Caldas da Rainha. The oldest daily event in Caldas da Rainha, and the oldest outdoor market in the country. For 600 years, this market has been providing fresh vegetables and fruit to thousands of visitors every week. We will pick out some delicous treats from the vendors and then return to the house of Carrie and Harry to prepare our feast! Learn how to create a true "farm to table" menu. Carrie will guide you through buying vegetables and fruits that are in season and at their peak, and how to prepare them to showcase their flavors. Carrie will teach you how to integrate the various textures, tastes and cooking techniques to construct a beautiful menu, all of your guests will enjoy. As in typical Portuguese cuisine, the goal is to keep the dishes simple and letting the ingredients shine. This cooking "class", can either be "hands on" or enjoyed at a distance with a glass of wine in hand. We will discuss and serve wines that pair well with the dishes we are preparing. We will also discuss common sense approaches to hosting guests, and setting a beautiful table. Learn how to have fun in your kitchen, and how to include the whole family.

Carrie

I started my culinary career at a tiny Italian Restaurant in the Haight Ashbury of San Francisco. I started by waiting tables and doing dishes with one day a week of food prep. It was my part time job as I was a dance major at Lone Mountain College, taking classes and rehearsing every day and waitressing by night. At the tender age of 18, I realized that my passion for food was exceeding my passion for dance. Plus, I can dance in the kitchen! I enrolled in the California Culinary Academy in San Francisco, where I was VERY fortunate to have Chef instructors who would go on to become icons in the industry. Jeremiah Tower, Wolfgang Puck, Ken Holmes, and Carlo Middione. They were the founders of what is known today as the "Farm to table" cooking movement. Jeremiah Tower is known as the "father of California Cooking".

Staðsetning

The Praca Da Fruta in Caldas Da Reinha is one of the oldest continually operating local mercados in the country. People come from all over Portugal to see this market. Our favorite day of the week is Saturday, as that is the best day to go to the market. We see friends and love chatting with the vendors we regularly buy from. Often we stop for a coffee and a pastis de nata, visit the fish market and the cheese market and even the butcher!
